a simple micro switch mounted behind the pedle assembly is the easiest way to go.
But the switch should have a latching function.
The easiest I have seen on a car was a toggle switch that is hit by an overtravelled pedal.

I agree. Just a simple toggle switch that is mounted so it is tripped by the brake pedal if (God forbid) it overtravels....

we used a push-pull switch last year instead of a toggle, still the same principle though
