I am looking for some technical web sites or literature that will yield some useful information on turbo charging a Honda 600 motor. It seems as though most info online is for big bikes (zx12, gsxr1300, etc...), and even then its not that technical. Any help would be great.

Information specifically aimed at 600cc engines is all but non-existant, so learning as much as you can about turbo systems in general and then applying it to small displacement engines is the best you can do. Luckily, turbo systems behave very similarly regardless of size.
Books are your best bet; Maximum Boost By Bell is a good start to understanding turbo systems. The author Janota springs to mind but I can't recall the title.

P.s. Look in your local library for hot rod magazine roughly a year ago, there was a 3 part article on turbo chargers which was pretty informative and covered more on turbine behavior then i've read most other places.

I second the recomendation for "Maximum Boost" by Corky Bell and will add another one to the list... "Motorcycle Turbocharging, Supercharging and Notrous Oxide" by Joe Haile. It's not as technical as the Bell book, but has some good information.
