Note: it appears that there is a misprint on Honda's service manual.
(It looks like 6th gear has a similar ratio to 3rd gear?)
Actual ratio is 28/24 which is 1.16667.
So, how do I convert from engine revs to revs of sprocket on the CBR in 6th gear.
Do I take engine revs, divide by 6th gear ratio 1.167,
then divide that number by the final ratio: 2.625?
So 13,000rpm / 1.167 = 11143
And 11143 / 2.625 = 4245

You are almost correct, but there is also a "primary" reduction ratio from the crank to the transmission shaft. According to http://aperaceparts.com/tech/ (awesome database, by the way) the '05 CBR600 RR has a primary ratio of 2.11. You will want to check your service manual against this, it should be in there somewhere.
So, your wheel RPM at 13k engine RPM would actually be:
13'000/(1.166*2.625*2.111) = 2012
