What would be the best steering ratio to use?
3, 6 or 12
For the driver which is the best?
I think 3 is the best but is it easy to built?
Which parameters should I consider?

6 would be the most appropiate. With 12 you need to steer a lot the steering wheel in the Hairpin Turn and with 3 any undisered movement of the driver will affect a lot the wheel.
For designing try a 1.5 module is the most useful one. Try long steering Arms with 100% Ackermann

270 degress total steer at the steering wheel
100 % (ish) ackerman
with 25 deg at the outer wheel, 33 deg at the inner wheel
