I am new to formula, and I am looking through the tire data that we purchased. For the new Goodyear tires, I have noticed that for a normal force around 300 lb there is not a peak in the lateral force that the tire can sustain for a range of slip angles. The lateral force just keeps increasing with increasing slip angle, all the way up to 90 deg. This can't be right. Does anyone know what is going on here?

Are you entering your normal loads as negative numbers? If not, you'll get totally bogus results.

Plot your fit versus raw test data. Does it match? If its not remotely close, check your coefficients, check inputs, etc.
