Whichever you can do better.

MIG works well for most things but is cumbersome for small things and typically leaves some ugly beads.

TIG will probably work for everything on a Formula car but takes more time and opens up the possibility of poor welds more than MIG.

I personally recommend looking into JB. It will require an SEF but is quite simple.
