You guys with in-car video- what camera and recording setup are you running? Seems like there are a few variations out there...

Well,
I just recently got one installed in our 2003 car. I went with a 400 line resolution color camera from http://www.supercircuits.com. I chose one from them primarily b/c they list the field-of-view parameters, which is important to making sure you can see everything (tires, steering wheel, and the course ahead). I chose a 72 degree FOV. They have many models with more and less FOV, or you can work with them to match a lens to your needs.

As far as recording, a MiniDV camcorder that can record from an auxilary input (ie another smaller camera) worked great. The extra bonus of using one is great video fidelity, and it's very easy to transfer to computer via firewire.

The camera was mounted up behind the driver, and the recorder is kept rapped in foam under the driver's knees.
