My team itself hasn't done anything do reduce our carbon footprint. There are however numerous things that a team could do to reduce their footprint. If your team does seem to be really focused on offsetting carbon emissions the Hybrid competitions would be a great way to show so.

Firstly, one easy way to do so would be to go paperless or at least use less paper. This can be done by passing along digital copies of files rather than hard copies. If you do happen to need to print off hard copies try using recycled paper. Also, keeping a public bulletin board around your shop to deliver information rather than sending copies to each member.

Next, try doing physical things to remove the carbon. Tree plantings could be a great to physically see the changes that you have made, as well a group building exercise.

So all in all, these can have decent ways to tie into Sponsorship and Media Interest. In terms of Sponsorship try using digital files or recycled products and stating that they are recycled to keep in mind your goals to reduce your carbon footprint. Media attention can be best gained during school events such as green week (Week around Arbor Day) the college paper would typically do some features on organizations that are making strides to be "green".

I'm just wondering what kind of plans you yourself have for your team.

There are teams that feel they need to offset the lack of a carbon footprint from other areas in there school (Fuel cells, Ethanol, etc.) and do so with reckless abandonment.

But really, how green do you want it, very little fuel is burned by each team. Tire usage is nothing compared to most race teams. Our formula team has a smaller carbon footprint than our Formula Zero team (mainly due to them flying/shipping across seas and competing).
